Ingredients:
2 cloves garlic, crushed
1 tablespoon fresh root ginger, finely grated
4 shallots, finely sliced
4 tablespoons rice vinegar
1 whole cucumber, peeled and de-seeded and finely sliced
2 large chillies, de-seeded and finely chopped
splash of coconut milk (optional)
Method
1. Place all the ingredients in a large mixing bowl. Toss well together and chill really well
