Toad in the Hole
A simple meal for the family.

Preperation time 30 minutes
Cooking time 30-45 minutes

Ingredients:
Main meal
125g (4oz) Plain White Flour
300ml (� pint) Milk
2 Small Eggs
8 Pork Sausages
2 tbsp lard

Method
1. Place flour in a bowl, make a well in the centre then add eggs.
2. Mix in half the milk using a wooden spoon, work mixture until smooth then add remaining milk.
3. Beat well or until surface is covered with tiny bubbles then rest mixture for 20 minutes
4. Cook sausages in a frying pan until brown on all sides
5. Preheat oven to 220�C; 425�F: Gas 7
6. Add lard to deep sided baking tray and place in preheated oven
7. Allow to heat until smoking, remove tray from oven with care
8. Add batter mixture and sausages to tray and put back into oven.
9. Bake for almost 30 minutes or until batter has risen and is brown and crispy
10. Serve with vegetables of your choice and gravy
