Smoked Fish Pate
You will find locally smoked salmon and trout in farm shops and deli's all across North Yorkshire. A great starter or a quick light lunch.

Preperation time 5 minutes
Cooking time 5 minutes

Ingredients:
1 teaspoon Paprika
225g/8oz Smoked Salmon
225g/8oz Smoked Trout, Kippers or Mackerel
150ml/5floz Fromage Frais
150ml/5floz Soured Cream
Zest and juice of 2 Lemons

Method
1. Flake the fish and place in a food processor with soured cream, fromage frais, lemon zest and juice. Blitz until smooth. Taste and add more lemon juice and salt and pepper if required.
2. Spoon into ramekins and smooth the tops. Sprinkle with a little extra paprika.
