'Thornhill Dexter' Beef Pudding
A perfect way to eat beef

Preperation time 10 minutes
Cooking time 50 minutes

pinch of nutmeg
25ml/1floz oil
salt & pepper
1 garlic clove - crushed
15ml/1 tablespoon chopped fresh parsley
1 small onion, finely chopped
675g/24oz minced Dexter beef
300ml/10floz yorkshire pudding batter

1. Stir in the nutmeg into the batter mix, preheat oven to a hot 200C/Gas6
2. Mix together the mince, parsley, onion, garlic, salt and pepper to taste
3. Heat the oil in a small baking tin and pour in half the batter
4. Quickly spread over the meat mixture
5. Pour over the remaining batter
6. Bake for 20 minutes
7. Remove the oven temperature to a moderate 180C and and bake for a further 30 minutes, or until the pudding is golden brown
8. Serve with a selection of fresh, locally grown vegetables
