Ingredients:
Mayonnaise or yoghurt - approx 2 - 3 tablespoons to taste
1 apple, diced
225g/8ozs diced beetroot
Lemon juice
Seasoning
Chives
225g/8ozs salad potatoes, cooked with skin on, sliced and seasoned
Parsley

1. Place all the ingredients in a large bowl and mix until all the ingredients are coated with the yoghurt or mayonnaise
